Tomato Crop Update
On January 31, 2011 the World Processing Tomato Council met and reported crop intentions from most of the world. Unfortunately, China was unable to estimate due to weather, agricultural, and financial uncertainties. Thus our best guess is that the 2012 tomato crop will mirror the last few years. This is balancing news as inventories are nearing depletion. Southern Hemisphere regions are producing with favorable reports from South America & Australia.

Seasoning * 1/2 cup tequila * 1/4 cup triple sec * 1/2 cup lime juice * 1 cup Kagome Salsa
Directions
1. Trim away visible fat
2. Rub the seasoning into the meat and let rest for 20 minutes. 3. Place the pork in a crock pot and pour in the remaining ingredients. Use enough Salsa and liquid to cover the meat. Cook on low for 6-8 hrs. 4. Remove pork from the crock pot and cool for 20 minutes. 5. Reserve some of the cooking liquid.
6. Pull the pork apart. 7. Rehydrate with some of the liquid, season and serve.
