Consumers repeat purchase of their favorite sandwiches for lunch, according to recent Technomic Sandwich trend report.  New breads, memorable sauces, ethnic flavors, healthy, and portable are making sandwiches "craveable".
For dinner consumers are choosing portion size and more willing to veer from healthy eating.  Also important is quality and price for dinner sandwich decisions.
Focus on Heath 
Healthy Concepts

 

As the economy begins to correct, consumers continue to ask for healthy options.  According to recent Technomic health study about 50% of consumers responded that they select restaurants because they serve food low in fat, sodium or calories.   Gluten free and Trans-fat concerns also are frequently stated.  

The trick is to provide healthy food that is delicious and results in a memorable dining experience.

Tomato Crop Update

On January 31, 2011 the World Processing Tomato Council met and reported crop intentions from most of the world.  Unfortunately, China was unable to estimate due to weather, agricultural, and financial uncertainties.  Thus our best guess is that the 2012 tomato crop will mirror the last few years. This is balancing news as inventories are nearing depletion.  Southern Hemisphere regions are producing with favorable reports from South America & Australia.

Margherita Pork
 

Ingredients 

* 3 lbs pork shoulder

* 3 Tbsp. Taco

Seasoning
* 1/2 cup tequila
* 1/4 cup triple sec
* 1/2 cup lime juice
* 1 cup Kagome Salsa

Directions 

1. Trim away visible fat

2. Rub the seasoning into the meat and let rest for 20 minutes.
3. Place the pork in a crock pot and pour in the remaining ingredients. Use enough Salsa and liquid to cover the meat. Cook on low for 6-8 hrs.
4. Remove pork from the crock pot and cool for 20 minutes.
5. Reserve some of the cooking liquid.

6. Pull the pork apart.
7. Rehydrate with some of the liquid, season and serve.
