Delight in Summer's Tomato Bounty

Take advantage of the summer tomatoes coming into season at your local grocery store or farmers market. The many colors and flavors are a pleasure to behold.


Tomato Bruschetta

Bruschetta at its simplest is grilled bread rubbed with garlic and drizzled with olive oil. This recipe calls for summer ripe tomatoes and basil, but there are an endless number of toppings that can work. We recommend working with produce that is in season.

When a dish only has a few ingredients you do all you can to source the highest quality ingredients. Use crusty coarse bread; ripe grape, cherry, heirloom, or roma tomatoes harvested at the height of the season; freshly picked basil; and the best extra-virgin olive oil your budget will allow.

1 Loaf Baguette or good crusty course bread
1 lbs. (500 g.) Cherry Tomatoes or 3 to 4 Large Tomatoes
8 Leaves Fresh Basil, torn into small pieces
2 Cloves (divided) Garlic
1/4 cup (2 fl. oz./60 ml.) the Best Extra Virgin Olive Oil your budget allows
1-2 Pinches or to taste Salt
to taste Pepper



1. Preheat the broiler.

2. If using cherry tomatoes, cut them in half. If using large tomatoes, core and seed them and cut into 1/2-inch (12-mm.) pieces. In a bowl, combine the tomatoes, basil, a pinch or two of salt, a grind of fresh pepper (to taste).

3. Place the bread slices on a baking sheet, brush on olive oil to both sides and broil, turning once, until crisp and golden on both sides, about 3 minutes.

4. Immediately rub one side of each slice with a garlic clove, using 1 clove for 4 slices.

5. Arrange the bread slices, garlic side up, on a platter. Spoon the tomato mixture on the slices and serve. Serves 4.
