Reenergize with Popcorn Pick Me Up Bites

The holidays are over and it’s time to reenergize for the new year.  Benefiting from the chia seeds and extra protein from the peanut butter powder along with the extra crunch from the sunflower seeds this popcorn recipe gives you just what you need for that afternoon snack attack or post workout hunger. 

Servings: 12 Prep Time: 20 minutes Cook Time: 30 minutes


4 cups Popped Popcorn
½ cup Sliced Almonds
½ cup Roasted Sunflower Seeds
1 cup Dried Cherries
½ cup Mini Chocolate Chips
1 tablespoon Chia Seeds
4 tablespoons Butter
2/3 cup Honey
¼ cup Coconut Sugar
4 tablespoons Peanut Butter Powder
2 teaspoons Vanilla Extract
½ teaspoon Kosher Salt
Additional butter for greasing hands


1.     Preheat oven to 300°F

2.     Set aside popped popcorn in a large bowl.

3.     Grease a metal or glass 13 x 9 x 2-inch baking pan.

4.     Place popcorn, almonds, sunflower seeds, dried cherries, chocolate chips, and chia seeds in a bowl.

5.     In a saucepan over low heat, melt butter.  Add honey, coconut sugar, vanilla extract, peanut butter powder, salt and stir constantly over medium heat.

6.     Once blended bring to a boil for about 2 minutes. Remove from heat.

7.     Drizzle about 1/3 of the syrup over the popcorn mixture and quickly fold it together with a rubber or silicone spatula. Repeat with the remaining syrup and popcorn mixture. 

8.     Grease hands with a small amount of butter.  Press popcorn mixture into greased baking pan.

9.     Place pan in oven and bake for 30 minutes or until lightly browned.
